So what even is cottage cheese and why is it so popular? Like other cheeses, cottage cheese is made from the process of coagulating milk. Coagulated milk is made when an acid, enzyme, and maybe some heat is added to fluid milk and separates the milk into two components: liquid whey and milk solids (known as the curd).
Cottage cheese is just one of many cheeses that are made from the milk solids component of coagulated milk.
To make cottage cheese, the producers take the curd and process it further to remove more of the liquid whey. It’s then compacted and pressed to remove even more of the liquid whey. Finally, it is rinsed and salted resulting in cottage cheese.
As a dairy product, cottage cheese is very high in protein, moderate in carbohydrate content, and varies in fat and total calorie content based on which fat percentage you choose to buy. You can buy non-fat, 1%, 2%, and whole milk options as well as varying curd sizes from large to small to completely blended and smooth like yogurt.
So what does cottage cheese taste like? When compared to greek yogurt, cottage cheese is incredibly mild in flavor with no tang and has a flavor profile more similar to that of ricotta cheese. To me, cottage cheese has a VERY mild cream cheese flavor which makes it a tasty addition to both sweet and savory recipes.
What is cottage cheese cookie dough?
Cottage cheese cookie dough became incredibly popular on Tik Tok after a creator mixed blended cottage cheese with almond flour, protein powder, sweetener of choice, vanilla, salt, and some chocolate chips. The result was a high protein, edible cookie dough like bite that satisfies a sweet tooth while nourishing the body.
While I do not think that cottage cheese cookie dough tastes EXACTLY like real cookie dough, I do think it closely resembles a classic sweet treat but without the food safety risk, less sugar and fat, and more protein! Here are a few reasons why you may want to try out cottage cheese cookie dough before you knock it:
Uses blended cottage cheese: the result is smooth and creamy without any traces of the classic cottage cheese texture that some people do not prefer.
