Caprese Ravioli Skewers
For events from tailgates to baby showers, these caprese ravioli skewers are incredibly easy to make, look beautiful on a platter, and come together in flash making them the perfect appetizer for any party.

While fall may be fast approaching, the summer flavors are still alive and well and there are few things as refreshing as a fresh caprese salad on a hot summer day. With juicy tomatoes, creamy mozzarella, and fresh basil, what’s not to love?
I wanted to take the fresh flavors of caprese salad and turn them into a shareable small bite that can go where you go. I first had caprese ravioli at a restaurant and thought, why not make this dish portable?!
Enter, these easy caprese ravioli skewers. These skewers are the perfect combination of fresh caprese flavors and filling ravioli giving you a balanced bite that’s perfect for every party!

Heartier than traditional caprese: I wanted to add some sort of pasta to these skewers to help beef them up and make them a bit more filling than traditional caprese. I have ordered caprese ravioli at a few restaurants and knew it was the perfect option for these skewers!
Perfectly portioned: You are in full control of how large or how small you want to make these skewers. I used 8 inch bamboo skewers and added two of every ingredient but you could also get shorter skewers and simply add one of each ingredient to keep these more bite sized!
Prep ahead friendly: Because these skewers will be served cold, they can be made a day ahead of your party and stored in the refrigerator until you are ready to serve.

Ingredients:
You’ll need all of the normal players for fresh caprese salad as well as some skewers, pesto, and a bag of ravioli of your choice. If you want, you may make your own ravioli and pesto sauce but I wanted to keep this recipe simple so we stuck with store bought!
Cherry tomatoes: I prefer the look of multi colored snack tomatoes but you can use all red cherry tomatoes if that’s what you have!
Mozzarella balls: For extra flavor, I recommend using marinated fresh mozzarella like this one from BelGioioso. There are also tons of recipes online for making your own marinated mozzarella that would pair well with these skewers as well.
Fresh basil: You’ll need about 15-30 leaves of fresh basil for this recipe! Personally, I ripped each leaf in half and added two of the halves to my double skewers. You may need more basil if you prefer a stronger basil flavor and want to use two leaves per skewer.
Pesto: Store bought or homemade, this is just to add some flavor to the ravioli.
Ravioli: Again, you can make your own but I went for simple so bought the 10 oz bag of Four cheese ravioli and cooked it to package instructions.
Balsamic Glaze: We will add this once everything has been skewered!
Skewers: Buy the skewer length that you want to serve. While I made these as a double skewer, some people prefer to keep their skewers a bit shorter and easier to eat. For that, I would just add one of each ingredient and buy these 6'‘ skewers or cut the 12” skewers in half!
The process:
The best part about these caprese ravioli skewers is how quickly they come together. Here’s what you’ll need to do:
Cook your ravioli to package instructions then gently toss in the pesto.
To your skewer add a ravioli, 1/2 a leaf of basil, a mozzarella ball, and two tomatoes. Repeat the process depending on how large of a skewer you want to make.
Add your tomato caprese skewers to a platter then lightly drizzle with balsamic glaze. Serve and enjoy!
Swaps and substitutions:
There are so many ways that you can make this cottage cheese queso your own. You can try:
Adding some spice: Make this a spicy caprese by adding slices of fresh jalepeno to your skewers.
Add a protein: If you want to make these skewers even heartier, add a piece of grilled chicken or other protein of choice.
Change your ravioli: I used a four cheese ravioli but there are so many different flavors that would work well. You can also skip the ravioli entirely and stick with pesto rotini or tortellini as the carbohydrate of choice.
Make it breakfast friendly: If you have a breakfast shower or event that you want to bring these caprese skewers to, simply add a hardboiled egg to each skewer to take a fun breakfast twist on this recipe.

These can be prepared 1 to 2 days ahead of your event and stored in the refrigerator until your are ready to serve!
What size skewers are the best?
I made these as double skewers and added two of each ingredient so I went with the 12 inch wooden skewers. If you want to make shorter skewers and just add one of each ingredient, you can purchase the 6 inch skewers and make more of them!
How long will the leftovers stay good?
Per the USDA, you can refrigerate the leftovers for 3 to 4 days and enjoy throughout the week making this a great dip to store in the refrigerator. As always, you should also use your best judgment when assessing leftovers.
