We are back with another overnight oatmeal recipe and wow, am I excited for this one!

I’m sure we all have had at least one moment in our life where we enjoyed some candy at breakfast time… or at least wished we could enjoy candy for breakfast. If you have ever had those desires… or have a kid who is in a BIG candy phase at the moment, then I have the perfect recipe for you.

This snickers overnight oatmeal is a candy lovers dream come true. With a peanut butter oatmeal base, a naturally sweetened date caramel layer, and topped off with a dark chocolate cap and salted peanuts, this overnight oats recipe is filled with all of the snickers flavors in one nutritious oatmeal bite.

Prepped ahead of time, these 10 overnight oat recipes are designed to be tasty, satisfying, and a convenient grab and go breakfast that fits your busy morning schedule.

Ingredients:

You will be using a lot of similar ingredients that we used to make the snickers date bites, but with an oatmeal base addition. Here’s what you’ll need:

  1. Old fashioned oats: I find that old fashioned oats work best for overnight oats.

  2. Milk: I recommend milk over water for extra protein and creamier oatmeal.

  3. Peanut butter: You could also use PBFit.

  4. Medjool Dates: I used pitted medjool dates. We are going to blend the medjool dates with 1/2 cup of warm water or liquid of choice to make a simple date caramel.

  5. Melting chocolate: I used dark chocolate but you could use milk

  6. Salted peanuts: You could also use unsalted peanuts and add a dash of course sea salt.

Step by Step Instructions:

I won’t lie to you, prepping these snickers overnight oats WILL require a few additional steps than other overnight oatmeal recipes that I have on the blog. That said, I provide suggestions in this section so that you can simplify this recipe and keep it meal prep friendly and easy to make!

Let’s start with your first step:

The night before:

  1. In a medium glass bowl, mix your oatmeal, milk, and peanut butter together until thoroughly combined. Cover and refrigerate overnight, or for a minimum of 4 hours. Your liquid should be absorbed and the oats fairly thick.

In the morning:

If you want to prep this recipe exactly how I made it and mimic the layers of a snickers bar, then you will have some work to do in the morning. Here’s what you will do:

  1. Divide your peanut butter overnight oat mixture between 2 smaller glass jars. Fill each jar about 3/4 of the way full with oatmeal, leaving space for the date caramel and chocolate cap.

2. Add your pitted medjool dates and liquid of choice to a blender then blend until it reaches a caramel consistency. Evenly distribute between the two oatmeal jars and spread it across the top as your layer of caramel.

3. Add your chocolate to a microwave safe jar and melt it, stirring often until fully melted. Pour an even, thin layer of chocolate to the top of each jar. Refrigerate for 1 minute or until the chocolate is fully hardened.

4. Chop your salted peanuts and sprinkle on to the top of your chocolate caps. There you have it, snickers overnight oats. Enjoy!

Now, let’s chat about how to make this recipe easier. As I said, I wanted to layer these overnight oats just like a real snickers bar would be layered… but that’s the time consuming part and you can definitely skip it.

If you want to fully meal prep this recipe, I would simply mix the peanut butter oatmeal as written and add chopped dates instead of blending the dates into caramel. Then, top the mixture with whole chocolate chips and some salted peanuts and allow it to sit overnight.

While your oatmeal will not look the same as the one in the picture, it will still have all of the flavors of a snickers bar wrapped up into one convenient bite!

Swaps and substitutions:

There are so many ways to make this snickers oatmeal exactly how you want it. Here are a few suggestions:

  • Keep it simple: As I mentioned, this recipe has a few more steps than normal overnight oats but you can really simplify it and make it a “one step” process. Instead of layering your flavors, simply chop your ingredients and mix them into your peanut butter oatmeal to sit overnight.

  • Add crushed sea salt: Sea salt is always a great addition to snickers bars!

  • Change your mix ins: Use coconut milk, add vanilla, sprinkle in cinnamon, or even add a scoop of protein powder to customize this recipe.

  1. What kind of chocolate did you use?

    1. Personally, I used the Ghirardelli Melting Wafers Dark chocolate because I find them to be really easy to melt. You can also melt some chocolate chips or a chocolate bar to form a thin chocolate cap!

  2. Can these overnight oats be warmed up?

    1. Traditionally, most overnight oat recipes can be warmed up in the microwave or on a stovetop. However, this snickers overnight oatmeal recipe is best enjoyed cold because the warm oatmeal will continue to melt the chocolate cap making for a really messy breakfast!

  3. How long can I store overnight oats in the refrigerator?

    1. Per the USDA, you can refrigerate the leftovers for 3 to 4 days and enjoy throughout the week making this a great breakfast option to keep on hand. As always, you should also use your best judgment when assessing leftovers.
