These baked oatmeal bars call for really simple ingredients that you likely already have in your pantry. Here’s what you’ll need:

  1. Banana: Choose a small banana that is not overly ripe… the larger and more ripe the banana you use, the more banana flavor will come through in your baked oats.

  2. Old fashioned oats: I recommend using old fashioned oats but you could also use quick cooking oats and slightly adjust your baking time.

  3. Maple Syrup: You could also use honey.

  4. Milk: I used Fairlife milk for extra protein.

  5. Eggs: These will bind your ingredients together.

  6. Baking Powder: This will help lighten up the texture and make it slightly more fluffy.

  7. Salt: To balance out the sweetness.

  8. Vanilla extract: For flavor depth.

  9. Cinnamon: Optional

  10. Chocolate Chips: I used semi-sweet chocolate chips but you could use whatever chocolate chips you prefer! If you want no added sugar, I recommend using the Lillys brand.

1) Aside from your chocolate chips, add all of your baked oatmeal bar ingredients to a blender and blend until your batter is almost smooth, leaving some small chunks of oats for a thicker texture.

2) Pre-grease an 8x8 baking dish (or line it with parchment paper) and pour in your oatmeal mixture.

LTN Tip: If you want to add different cookie flavors, you would add those now on the simple blended oatmeal base! You can add ingredients like cinnamon and brown sugar for snickerdoodle cookie oat bars or even cranberries and white chocolate chips for a cranberry white chocolate chip oatmeal bar.

3) Evenly sprinkle on a layer of chocolate chips to taste.

4) Bake at 325 for 20-25 minutes or until your oats are fully set and a knife comes out clean. Be sure to check them at the 20 minute mark so that you do not overtake them and end up with dry oatmeal bars!

These cookie oat bars can be served in so many different ways. Some other ideas are to:

  • Change your cookie flavors: Want to skip the chocolate chips? You can! The oatmeal base is simple enough that it pairs well with really any other cookie flavors you choose. Think of your favorite cookie and include those ingredients instead.

  • Add in nuts or seeds: Chopped pecans, pumpkin seeds, and walnuts are all tasty and nutritious additions to a baked oatmeal bar recipe.

  • Add fun toppings: Sliced banana with almond butter, nutella with strawberries, or even my peanut butter cottage cheese recipe would be all be delicious toppings for these cookie oar bars.

    1. The mashed banana adds some nutrition and a bit of moisture to the recipe but it can certainly be substituted another moist addition like cottage cheese, apple sauce, or even extra eggs.
