These cheesy cottage cheese egg bites are blended to perfection and simply seasoned for a classic breakfast bite. With 100 calories and almost 9 grams of protein per egg bite, this recipe is a high protein breakfast that will your entire family will love!
Breakfast is often the meal that people skimp on… especially when they are running short on time. If you are already scrambling to get out the door on time, how can you possibly find the time to make a balanced meal for yourself?
Enter, meal prepped breakfast ideas. Taking the time on a Sunday to meal prep 1 or 2 different breakfast options can really help you stay on top of your nutrition throughout the week while also helping you stay on time in the morning!
While the meal prepped breakast area has largely been dominated by overnight oat or protein chia seed pudding recipes (and trust me, I have many of those for you to choose from), I want to encourage you to look past the meal prepped grains and seeds and consider adding in some eggs to your weekly mix!
Hardboiled eggs are likely the easiest way to meal prep eggs but another great option are meal prepped egg bites. Eggs mixed together with a variety of ingredients then baked in a muffin pan until fully cooked through… egg bites help add a little flavor diversity that hardboiled eggs are missing.
If you want a simple egg bite recipe that is easy to throw together and loaded with protein, then these cheesy blended cottage cheese egg bites are the perfect place to start! With only a few ingredients and seasonings of choice these egg bites are simple, delicious, and nutritious to have in the morning!

Egg bites can be made in so many different ways but I personally love these cottage cheese egg bites because they are:
Easy to make: Just a few ingredients, a blender, and a muffin pan (either silicone or lined with silicone liners) is all you’ll need to make these high protein egg bites!
Family friendly: One of the reasons why I left this recipe really simple in flavor is because I needed it to pass the toddler test… and it absolutely did! What kid doesn’t love simple, cheesy eggs?
Protein packed: Protein from the eggs, cottage cheese, and cheddar cheese all combine to give each egg bite about 9 grams of protein and 100 calories.
Blended: Hearing “cottage cheese egg bites” may have you running for the hills… but trust me, try it before you let the traditional cottage cheese texture scare you off. This recipe is fully blended so you won’t even know that there is cottage cheese in it.
Fully customizable: Add sausage, veggies of choice, and other flavors to this recipe. It really is the perfect base!

Ingredients you’ll need:.
This recipe comes together with just a few ingredients. For these cottage cheese egg muffins you’ll just need:
Eggs: I used the whole egg but you could personalize the recipe and combine whole eggs and egg whites.
Cottage cheese: I used low fat good culture for the extra protein and lower calorie content.
Shredded cheddar cheese: FRESHLY SHREDDED! This will help it melt better than if you buy pre-shredded cheese from the store.
Seasonings: I recommend seasoned salt and a little bit of black pepper but you could use whatever seasonings you like in your eggs.
That’s all you’ll need for this recipe! It really is that easy.
Step by Step Instructions:
Now let’s walk through how to make this recipe. You’ll just need a blender, a silicone muffin tin (or muffin tin lined with silicone liners), and 30 minutes of patience!
Here’s how you’ll make them:
1) Crack all of your eggs into a blender then add your cottage cheese and seasonings. Blend until fully combined and you have some bubbles on the top.
2) Evenly pour your egg mixture into a 12-muffin pan, filling each spot about 3/4 full.
LTN Tip: I highly recommend using a silicone muffin pan or lining your traditional muffin pan with silicone liners to help with clean up and muffin texture. Silicone muffin pans will give you smoother edges on your off bites but I used these muffin liners for this recipe and they worked great!
If you choose to use a traditional muffin pan, spray it really well with non-stick spray or butter and be prepared to use a lot of elbow grease to get it cleaned afterwards.
3) Evenly sprinkle your cheddar cheese across the top of each muffin.
4) Bake at 300 for 30-35 minutes or until your egg muffins are fully set. It is normal to see them rise, and some may even rise above the silicone liners… don’t worry, they deflate! Enjoy these egg bites warm and serve them with sides of your choice.
LTN Tip: It is normal for egg muffins to rise a lot and then deflate, sometimes even caving in on themselves after you take them out of the oven. Two ways to avoid your muffins caving in is to:
1) bake at a lower temperature for and
2) submerge your muffin tin in another pan that contains water while it bakes.
With the oven temperature at 300, you will see these egg bites rise but they will deflate back in to normal sized egg bites.
How to serve cottage cheese egg bites:
These high protein egg bites can be customized or served exactly how you like them. Some things you may want to try would be to:
Pair them with your overnight oatmeal: If you want a meal prepped and balanced breakfast, pair these cottage cheese egg bites with meal prepped overnight oats for a grab and go breakfast that checks all of the nutrition boxes!
Adding your veggies: Veggies like bell peppers, spinach, kale, mushrooms, and others are all delicious in egg muffins. Simply dice up your veggies and add them to your muffin cups when you add your shredded cheddar cheese. You may need to increase baking time.
Serve them with a side of fruit: I love to keep these protein egg bites simple and then pair them with fresh berries or a banana and peanut butter.
Add a protein: Mix cooked sausage or bacon into these egg bites or serve the eggs bites with a side of sausage, bacon, turkey sausage, and more!
Change your seasonings: I kept my seasonings really simple but you could add whatever seasonings you like such as everything bagel seasoning, garlic salt, paprika, or fresh herbs if you want to go a different flavor direction.
The flavor options and meal pairings are endless! View these egg bites as the “protein” of your meal and add in your color and whole grains to balance out your plate.

How to store egg bites?
These protein bites should be stored in the refrigerator in an air tight container. They can be enjoyed for 5 days.
Can you freeze egg bites?
Yes! Egg bites are perfect, freezer friendly breakfast options. Then, you can either cook them from frozen or allow them to thaw in the refrigerator overnight when you are ready to enjoy. Note that the eggs may release some extra moisture if they have been frozen.
Can I use egg whites?
I did not test this recipe with egg whites but you could certainly try it out and report back! If you are going to use egg whites, I would suggest using the egg whites of 14-15 eggs instead of the 8 whole eggs that this recipe calls for.
