I absolutely love the Christmas season- time with family, fun food, cozy homes with festive music playing in the background. However, the holidays also bring packed schedules… a fact I sometimes need to actively find joy in. Most of us have too many places to go, too many recipes to make, and not enough time (or energy?) to always get it done with a smile on our face!

With the busy holiday schedule, it’s important to have easy holiday recipes that you can throw together and this 3 ingredient white chocolate peppermint date bark is the perfect peppermint Christmas dessert that comes together in a flash and would be great at your parties!

What is date bark?

The Viral date bark recipe took the internet by storm and uses medjool dates as a base then tops them with melted dark chocolate, peanut butter, and crushed peanuts resulting in a snickers-like dessert. I added a seasonal flare to this recipe and subbed in crushed peppermint and white chocolate for a beautiful, delicious, and easy holiday dessert recipe!

  • Easy to make: No special baking skills required for this easy peppermint Christmas dessert. All you need to do is sliver (or halve then smash) your medjool dates, melt the chocolate and evenly spread it over the dates, then top with crushed peppermint and into the freezer it goes!

  • Can be modified: there is really no “wrong” way to make date bark. You can add any of your favorite toppings or another base below the medjool dates to add different flavors.

  • Can be made ahead of time: date bark is stored in the freezer and can be made ahead of time for you to get early holiday prep out of the way

Ingredients:

  1. ·Medjool dates: My favorite are Natural Delights medjool dates and you can buy pitted or whole, which will need to have the pits removed.

  2. White Chocolate: I highly recommend using white chocolate bars for this recipe because white chocolate chips have ingredients in them that can make them more difficult to melt.

  3. Crushed peppermint: buy it pre-crushed or crush your own peppermint canes!

Recipe modifications:

This white chocolate peppermint bark can be made in so many different ways like:

  • Brownie peppermint bark: simply bake your favorite brownies then put the brownies at the bottom and layer on your dates, white chocolate, and peppermint. Freeze and serve!

  • Pretzel peppermint bark: not a brownie person? Swap the brownie base out for a layer of salty pretzels instead. This will add a tasty crunch and a salty flavor to your sweet peppermint bark!

  • Dark chocolate peppermint bark: this recipe will be equally as delicious with dark chocolate instead of white chocolate!

  • Rumchata peppermint bark: sorry kids, adults only for this recipe! Add 1/2 cup of rumchata to your melted chocolate before pouring it over the dates for a festive and boozy flare!

Instructions

  1. Remove the pits from your medjool dates and sliver into small pieces.
  2. Lay your medjool date slivers evenly on a parchment paper lined baking sheet to form a base.
  3. Melt your white chocolate then spread it evenly over the medjool date slivers being sure to reach the corners.
  4. Sprinkle on your crushed peppermint and freeze for at least 20 minutes. Serve chilled and enjoy!
