I love everything about a snickers bar. The chocolate. The creamy caramel. The crunchy yet salty peanuts. It all works! In fact, I used to have a snickers bars in my lunchbox every day when I was a kid. Now as an adult, I wanted to find a way to create an almost snickers bite with a bit of a health twist.

Enter, snickers dates. I first tried the viral snickers dates when I was 8 months pregnant and I was blown away by how similar they taste to the real thing Are they a candy bar? No. But the natural sweetness of dates perfectly complements the other ingredients, you’ll be surprised by the similar flavor!

What are date snickers?

A date snickers is the name given to medjool dates that have been stuffed with peanut butter, coated in chocolate (milk or dark), then topped with crushed peanuts. The flavor profile is very similar to that of a snickers bar, which is where they coined their name!

The reason why the flavors work so well is because of the natural sweetness of medjool dates. With an almost caramel like flavor, medjool dates are a perfect caramel substitute for recipes or can be added to a variety of recipes for a touch of sweetness.

Ingredients:

You’ll only need a handful of ingredients for this recipe including:

  1. Medjool dates: I recommend buying pitted but you can also buy whole and remove the pit yourself.

  2. Peanut butter: Crunchy or creamy.

  3. Melting chocolate: Can choose milk or dark chocolate.

  4. Salted peanuts: Finely chopped. The finer your chop them, the easier they will stick to the snickers bites.

  5. Course sea salt: a little sprinkle for the top of each date!

The process:

These snickers dates are really easy to make and ready in just a few steps. All you’ll need to do is:

1) Open your dates length wise and lay flat. Do not split all the way through.

2) Stuff each date with peanut butter. Close the dates then scrape off any excess peanut butter so they close fully.

3) Melt your chocolate (milk or dark chocolate) in a sauce pan then coat each date bite. Set aside.

4) While the chocolate is still wet, sprinkle each bite with chopped peanuts and a little bit of course sea salt. Refrigerate for at least 10 minutes.

    1. Medjool dates are naturally sweet and, while they do contain carbohydrates, they are filled with fiber that digests slowly and can keep your energy levels balanced. Medjool dates also have micronutrients like iron, potassium, calcium and magnesium!

Instructions

  1. Gently open your medjool dates along the line they were pitted at and lay them flat. Do not slice all the way through. (If you bought whole medjool dates, cut your medjool dates in half length wise and remove the pit. Do not cut all the way in half, leave one side in tact. Lay flat).
  2. Stuff each date with about 1/2 tbsp of peanut butter or until well stuffed. Squeeze the date shut and scrape off any excess peanut butter.
  3. In a medium sauce pan, melt your chocolate. Once fully melted, use a spoon to toss each stuffed date in the chocolate until well coated. Place the chocolate covered dates on a wire rack or flat surface.
  4. Finely dice your peanuts. While the chocolate is still wet, liberally top each date with chopped peanuts and a light sprinkle of course ground sea salt.
  5. Place the snickers dates in the fridge or freezer for at least 10 minutes to allow the chocolate to harden. Enjoy!
