Aside from this being a “set and forget” dinner, this recipe is also pretty simple when it comes to ingredients. Here’s what you’ll need:
Boneless Pork Shoulder: You can choose a bone in pork shoulder as well but I prefer using boneless. I highly recommend trimming off any excess fat prior to cooking and if using a bone in pork shoulder, remove the bone when you are ready to shred your pork.
Salsa Verde: Make your own or keep it simple and buy the jarred option like this mild salsa verde.
Cumin: Alot of the flavor for this recipe will come from the salsa verde and the fresh cilantro so we will keep the seasonings simple with just some cumin. You can alter seasonings any way you like!
Fresh lime juice: The acidity of the lime juice will not only add flavor but also help tenderize the meat while it cooks.
Fresh cilantro
Diced onions
Beans: Black or pinto. If you don’t like beans, you can certainly leave them out of this recipe!

Step by Step Instructions:
Now let’s walk through how to make this crockpot shredded pork recipe. You’ll just need a large crockpot, a food thermometer (if you don’t have one, please buy one), and a cutting board.
Here’s how you’ll make it:
1) Trim your pork shoulder or any excess fat that you see then place it into your crockpot. Add the juice of one lime, cumin, 1 cup of salsa verde (set the rest aside for later), and your diced onion. Place your crockpot on low, cover, and cook for 6-8 hours.
2) Using a food thermometer, start temperature checking your pork around the 6 or 7 hour mark as each pork shoulder will cook differently depending on the size. Once your pork shoulder reaches an internal temperature of 200-205 degrees Fahrenheit, it is still juicy but ready to be shredded!
Gently remove your pork shoulder from the crockpot, place on a large cutting board, and shred using two forks. Discard any large chunks of fat that you see.
LTN Tip: The pork will be cooking in the salsa verde but the pork will also release some of its own juices as it cooks. You can leave the juices for flavor OR discard some of the juices while you shred the pork if you want the final product to be thicker and less watery.
3) Place your shredded pork back into the crockpot and then add the remaining 1 cup of salsa verde salsa, your chopped cilantro, and the drained beans if you choose to include. Place your crockpot on low for around 30 minutes to allow the salsa to warm fully through.
4) Once warmed through, you have a fully prepped and shredded salsa verde pork! Adjust any seasonings as needed and garnish with fresh cilantro. Enjoy!

Do I have to use a pork shoulder?
You can use other cuts of pork if preferred but I highly recommend using a boneless (or bone in) pork shoulder for the crockpot because I find that it gets the most tender.
