High Protein Colorful Egg Bites

“Breakfast is the most important meal of the day”… a mantra we have all grown up hearing. Not only is eating breakfast important, but what you choose to eat at that breakfast is equally as important! While some breakfast foods can be high in carbohydrates and nothing else, breakfast is a great meal to focus on fat and protein instead to ensure you are making the most of that meal.

I've partnered with my friends at Challenge Butter to create these Colorful Egg Bites - a breakfast that is easy, nutritious and delicious! Why?

Why Are These Egg Bites Great?

I love egg bites and here is why:

  • They are a high protein, low carb breakfast option to start your day off right.

  • Depending on the type of diet you follow, eggs and milk are vegetarian friendly protein options.

  • Egg bites are a quick and easy high protein meal prep idea. We all love overnight oats for morning meal prep, but sometimes you want a more savory breakfast option. Meal prep these egg bites on a Sunday, store in an air tight container for 3 to 4 days, and warm up in the microwave right before you are ready to eat!

  • Are you looking to eat more vegetables throughout the day? These are an easy way to include vegetables at breakfast. Here I have tomatoes and spinach included in my eggs, but you can change up your ingredients to get in more vegetables!

Colorful Egg Bites

These eggs bites are high protein, loaded with vegetables, and a vegetarian friendly breakfast option on the go
Prep time: 5 MinCook time: 25 MinTotal time: 30 Min

Ingredients

Instructions

  1. Preheat your oven to 350 Fahrenheit.
  2. Whisk your eggs in a large mixing bowl. Add in the melted butter and nonfat milk. Whisk until well combined.
  3. Add your chopped bell peppers and spinach then sprinkle in your seasonings. Stir the mixture.
  4. Line your muffin pan with silicone liners or spray it with non-stick spray. Add ¼ cup of the egg mixture to each muffin tin.
  5. Bake at 350 for 25-27 minutes or until cooked through. Remove from oven and allow to cool. *Note that the egg muffins will deflate as they cool. Enjoy!
