Cooked chicken: Rotisserie chicken, cooked and shredded chicken, or even cooked ground chicken will all work for this recipe.
Flatbread: I used the Artisan Stoneware Flatbreads that are premade and sold in a pack of two. You can make your own flatbread or use whatever brand you prefer but note any difference in size of your flatbread and adjust your toppings accordingly.
Buffalo sauce: Use any brand you like. Your buffalo sauce will be used to coat the chicken and make the buffalo ranch flatbread sauce.
Ranch: To mix with the buffalo sauce and make a creamy buffalo ranch.
Shredded mozzarella cheese: You can certainly use a different cheese if you prefer.
Carrots and celery: I used two small carrot stalks and two small celery stalks for my crunch slaw
Blue cheese (or feta): This will add the final burst of flavor!

Step by Step Instructions:
It’s surprisingly easy to make this buffalo chicken flatbread and it will be ready to serve in under 30 minutes!
Here’s how you’ll make it:
1) Preheat your oven to 350. Place your flatbread on a lined baking sheet and bake for 10 minutes to get it crispy before you add your toppings.
While your flatbread bakes, coat your cooked and shredded chicken in buffalo sauce, mix together your buffalo sauce and ranch, and use a mandolin slicer to finely slice your celery and carrot slaw.
LTN Tip: If you do not have a mandolin slicer then you can pulse your carrots and celery in a food processor or simply finely slice them with a knife.
2) Remove your flatbread from the oven then spread on your buffalo ranch sauce, mozzarella cheese, carrot and celery slaw, buffalo chicken, then top with a sprinkle of blue cheese (you could also add this after the flatbread has baked if you prefer it cold).
3) Place your flatbread back in the oven and bake for 15-20 minutes or until your cheese has melted. Slice into squares and enjoy!

Swap the ranch for greek yogurt: You can easily swap out the ranch dressing for greek yogurt and make a healthy buffalo sauce that way.
Change your cheese: I recommend shredded mozzarella cheese for this recipe but there are plenty of other cheeses that would be just as delicious like a simple shredded cheddar or even a smoked gouda.
Use ground meat: You can swap the cooked and shredded chicken in this recipe for ground chicken or ground turkey.

Can I store this buffalo chicken flatbread?
You certainly can but I would say that this flatbread is best served fresh because as you reheat it, the chicken tends to dry out and the base of this flatbread can lose some of its crunch.
What kind of chicken did you use?
This recipe calls for cooked and shredded chicken so you have a few convenient options like rotisserie chicken or canned chicken that would both work. Personally, I bought chicken breast from the store and cooked it in my crockpot until it was fully shreddable.
Can I use chicken thighs instead of chicken breast?
Absolutely! If you have cooked chicken thighs on hand then I would simply chop those into small pieces, toss in buffalo sauce, and use that for your buffalo chicken.
