Of all the things that you didn’t know that cottage cheese could do, probably one of the most shocking is that adding cottage cheese to batters and doughs can really enhance the texture of your muffins, breads, and loaves.
Yes, people love to use cottage cheese as a protein boost for recipes… and it certainly does do that… but cottage cheese also adds a lot of moisture to breads and sauces without adding the tangy flavor that Greek yogurt would add making it a perfect ingredient to include in your baking.

Extra moist: I know people prefer any word other than the word “moist” but sometimes it really is the best descriptor. The addition of cottage cheese to these recipes, like Greek yogurt, adds an extra level of moisture that you will love! Cottage cheese muffins are the new “it” muffin!
Topped with cinnamon sugar: I kept my topping really simple and sprinkled on some cinnamon sugar. If you want to, you can add a delicious cinnamon streusel to the top of these muffins as well!
Lower in sugar: While this recipe does still have added sugar in it, I put a dietitians twist on the recipe and make a slightly lower sugar blueberry muffin than alot of other blueberry muffin recipes that you will find on the Internet.
Slightly higher in protein: Beyond the texture benefits, adding cottage cheese to muffins is an easy way to add a few extra grams of protein per muffin. No these are not high protein muffins.
Loaded with fresh blueberries: You can use fresh or frozen blueberries for this recipe and add them to taste.
Freezer friendly: I love to prep these cottage cheese muffins with blueberries on a weekend, enjoy half the batch throughout the week and then freeze the other half of the batch to always have blueberry muffins on hand.

To make these blueberry cottage cheese muffins you’ll need:
All purpose flour
Cottage cheese: I used the daisy brand but you could use your own favorite! There’s also no need to blend the cottage cheese before you add it to your batter, the curds break down as it bakes.
Oil: Vegetable oil, canola oil, or avocado oil are all great picks for this recipe.
Honey: I added honey to reduce the amount of cane sugar in the recipe, add some extra moisture, and enhance the flavor of these muffins. You could swap for maple syrup as well!
Sugar
Butter: This will add some moisture and a flavor depth that you do not want to exclude from your muffin recipe.
Eggs
Blueberries: Fresh or frozen. It’s very common for the blue color of the blueberries to seep into your batter!
Baking powder and baking soda: We will be using both so that our muffins have enough rise.
Vanilla extract
Cinnamon and salt: For flavor.
Lemon zest and lemon juice: This is optional but adding lemon to blueberry cottage cheese muffins really enhances the fresh flavor.
Step by Step Instructions:
Muffins come together really quickly and are the perfect baked good to prep on a weekend and enjoy throughout the week. Here’s how you’ll make these cottage cheese muffins:
1) Whisk all of your wet ingredients together in a large bowl.
2) In another bowl combine all of your dry ingredients then pour the wet ingredients into your dry ingredients and stir just until combined, being careful not to over-mix the batter. Then, fold in your blueberries until combined.
3) Line your muffin tin with individual muffin liners and fill each cup all the way to the top with the blueberry cottage cheese muffin batter. If desired, sprinkle the top with cinnamon and sugar for an extra dose of sweetness.
4) Bake until a knife comes out clean. Allow your muffins to cool slightly and serve with butter and a drizzle of honey. Enjoy!

Some things that you could do to make these blueberry cottage cheese muffins even better is to:
Add chopped nuts: Chopped pecans walnut pieces would be delicious in this recipe.
Stirring in chocolate chips: If you want a splash of sweet then you can mix in some chocolate chips or even butterscotch chips when you add in your blueberries.
Swap out the berries: If you do not have blueberries on hand then you can easily swap them out for another berry and make blackberry cottage cheese muffins or raspberry cottage cheese muffins instead.
Mixing in nutritious additions: Chia seeds, oats, pumpkin seeds, or ground flax seeds would all taste delicious in this recipe and add a nice boost of fiber, protein, and antioxidants.
Add citrus: This recipe suggests trying lemon and I highly recommend you add it to your batter. You could also add in some fresh orange juice and orange zest if you wanted a slightly different flavor profile.

No! Trust me, you do not even notice it is there once the muffins have baked. While some people struggle with the cottage cheese texture, cottage cheese bakes really well into muffins and pancakes and simply adds moisture and enhances the texture.
Can I swap the cottage cheese for Greek yogurt?
Yes, you can though the final texture may look slightly different. Greek yogurt will also add a slightly tangy flavor to your muffins that cottage cheese does not.
How to freeze cottage cheese blueberry muffins?
If you want to store these blueberry cottage cheese muffins in your freezer then all you need to do is allow them to cool entirely after baking, place them in a large ziplock bag that is well sealed, date your bag and then place it in your freezer.
Then when you are ready to enjoy a muffin, you can allow the muffins to defrost in the refrigerator overnight or place a frozen muffin in the microwave for 1-2 minutes until it’s fully warmed through. Enjoy!
