Ingredients:

You’ll just need a few ingredients to make this easy bruschetta cottage cheese toast including:

  1. Cottage cheese: I used Good Culture Cottage Cheese but you could use your preferred brand.

  2. Sourdough Toast: could also use whole grain bread

  3. Grape Tomatoes: Or a finely diced roma tomato.

  4. Cucumber: Optional but it adds a nice crunch.

  5. Fresh Basil: Necessary for our tomato bruschetta mixture.

  6. Seasonings: Garlic salt and Dried Italian Seasoning

  7. Balsamic Glaze: to drizzle on top

The process:

One of the best parts of cottage cheese toast recipes is how easy they are to make. This recipe is ready in minutes, all you need to do is:

  1. Chop your tomatoes and cucumber. I cut them into quarters but you want to be sure to cut them small enough to help them stay on your toast and make it easier to eat.

  2. Chop your basil then add your tomatoes, cucumber, basil, and seasonings to a small bowl and mix until well combined.

  3. Lightly toast your bread then spread evenly with cottage cheese toast. Top with your tomato mixture and drizzle with the balsamic glaze. Enjoy!

LTN Note: Depending on the size of your bread, you may need to add another piece of toast to fit all of the cottage cheese and tomato mixture. Or, you can enjoy the mixture on the side.

There are plenty of ways to serve this recipe exactly the way you like it including:

  • Change your bread:

  • Add more protein: Serve a larger portion of cottage cheese or add proteins like chickpeas, chopped chicken, or diced hard-boiled egg to your tomato mixture. You can also serve this savory toast alongside a grilled piece of salmon or chicken to boost the protein at your overall meal.

  • Make it with whipped cottage cheese: If you prefer a smooth cottage cheese texture then you can simply blend your cottage cheese in a blender or food processor before you add it to your toast.

  • Customize your veggie toppings: I personally love to add cucumber for the crunch but you could omit the cucumber and enjoy this as a traditional tomato bruschetta. You could also add other veggies or flavors like chopped artichokes, pepperonicini peppers, and more.

    1. Unfortunately, this is not a good recipe to fully assemble for meal prep as your toast will get soggy. If you want to meal prep cottage cheese toast, I recommend prepping the tomato mixture ahead of time and then assembling your toast when you are ready
