Brussel sprouts are a very versatile vegetable that can be roasted for a side dish, shaved and incorporated into a salad or eggs, or boiled then roasted for a crispy vegetable chip-like bite!

Proteins: Whether you are enjoying a backyard barbecue burger, some delicious thinly sliced chicken, or a beautiful steak, Brussels sprouts are a great vegetable side that can be made casually like this recipe or dressed up into a beautiful and colorful side.

This recipe calls for a few simple ingredients including:
Brussel Sprouts: Obviously. This recipe is for finely chopped brussels sprouts but you could use shaved brussel sprouts and decrease the cooking time by 5 minutes.
Grated Parmesan: Grated will stick better to the vegetables but you could also use shredded parmesan or a mix of the two!
Seasonings: garlic salt and some pepper
Oil: I used avocado but you could use your preferred oil
The Process:
These brussels sprouts are really easy to make and just take a few steps to get them oven-ready. Here’s how to make them:
Wash your brussels sprouts and remove any leaves. Then, trim off the stems.
Finely chop your brussels sprouts using a knife OR a vegetable chopper. If you prefer shaved brussels sprouts, you can shave them or even buy pre-shaved brussels sprouts to make this recipe even easier. If you use shaved Brussels sprouts, decrease the cooking time slightly.
Add your brussels sprouts, oil and seasonings to a bowl then toss until the Brussels sprouts are coated in oil. Sprinkle on half of your parmesan (reserving the rest for topping) and toss again.
Add brussels sprouts to a pre-greased baking sheet and roast for 20 minutes, tossing occasionally. Then, sprinkle on the remaining parmesan cheese and roast for another 5-10 minutes or until the brussels sprouts are fork tender. Enjoy!
A note from Lauren: If you do not own a veggie chopper, it’s one of my favorite kitchen tools and I highly recommend it! It makes to so easy to chop ingredients like vegetables and potatoes while also chopping them to equal sizes which helps them cook more evenly! Here’s the vegetable chopper I use.

Can I use shredded brussel sprouts?
Yes, you can! If you choose to shred the Brussels sprouts instead of chop them as the recipe is written, I would decrease the baking time by 5 to 10 minutes since shredded Brussels sprouts will cook quicker.
What if I don’t have those seasonings?
The seasonings in this recipe are really simple and can be swapped out for ones you do have including: onion powder, garlic powder, minced garlic, regular salt, and even seasoned salt!
What is the best cooking oil to use?
Since we are roasting these veggies in the oven at a higher temperature, I recommend using an oil like avocado oil which has a higher smoke point.
Easy Parmesan Brussel Sprouts

- Preheat your oven to 415 degrees.
- Wash then remove the ends and loose leaves from your brussel sprouts. Then thinly slice slice them using a knife or vegetable chopper.
- In a large bowl, toss your brussels sprouts in your avocado oil.
- Add your garlic salt, pepper, and 1/2 cup of your grated parmesan (reserving the other 1/4 for topping). Toss until the brussel sprouts are well-coated.
- Place your brussel sprouts on a large, pre-greased baking sheet and roast for 20 minutes, tossing occasionally.
- Remove your brussel sprouts, top with the remaining 1/4 cup parmesan, and roast for another 5-10 minutes or until fork tender. Serve warm and enjoy!
