As the mom of a toddler, I’m in a season of life where we simply do not enter a grocery store. Instead, I rely on grocery pick up which is a luxury that is both a blessing and a curse. A blessing because it’s so convenient and free. A curse because they almost always leave out an ingredient or order item.

Is it that big of a deal? Absolutely not… but sometimes you need all your items to complete your meal.

I had planned to make Mediterranean chicken flatbreads for dinner throughout the week and had placed an order for flatbread in my grocery pick up. It wasn’t until I got all of my groceries home and unloaded that I realized they did not include the flatbread or any usable substitute.

Instead of re-loading up my toddler and heading back to the store, I decided to make my own cottage cheese flatbread at home! Let me tell you, the store bought flat bread was not missed.

With only two ingredients, this cottage cheese flatbread recipe has easily become one of my favorite ways to use blended cottage cheese. Cottage cheese, self rising flour, and a little patience gives you a surprisingly fluffy flatbread that will have you skipping the store bought from here on out!

I have made recipes for greek yogurt flatbread before so it was an easy substitute to replace the greek yogurt with blended cottage cheese instead. I think you’ll love this easy recipe because it’s:

  • Only two ingredients: It really is that simple to make your own flatbread at home! I did add the option to sprinkle in a touch of salt, which I personally added to my recipe but cottage cheese does contain more salt than other dairy products so it’s not necessary if you choose to skip.

  • Neutral in flavor: I preferred the flavor of cottage cheese flatbread over greek yogurt flatbread because it’s much more neutral. While greek yogurt gives your flatbread a slight tang, the neutral flavor of cottage cheese helps this flatbread pair well with whatever toppings you choose!

  • Higher in protein: This recipe includes almost a full cup of cottage cheese which adds about 15 to 30 grams of protein to your dough depending on the brand of cottage cheese you buy. If you are looking for a high protein bread, I suggest you try this recipe!

  • Family friendly: My entire family, including my toddler, enjoyed this cottage cheese flatbread recipe and I felt good about the ingredients and protein content featured in each flatbread.

Ingredients you’ll need:

As I said, this is a two ingredient cottage cheese flatbread recipe with the option for a third ingredient that you can add or skip without compromising the flavor or texture.

Here’s what you’ll need:

  1. Self rising flour: Self rising flour is one of my favorite ways to simplify baking in the kitchen because it really cuts down on ingredients. If you do not have self rising flour, you can replace it with one cup of all purpose flour, 1/2 tsp baking powder, and some salt.

  2. Cottage cheese: We will use blended cottage cheese in this recipe. To make blended cottage cheese, you simply add your cottage cheese to a blender or blender cup and blend until smooth. I find that brands with higher moisture, like Daisy, blend the easiest.

  3. Salt (optional): Just a pinch of salt to enhance the flavor! Cottage cheese has higher salt content than other dairy products so you can definitely take or leave this ingredient if you want to.

LTN TIP: If you do not have self-rising flour, you can replace the one cup of self rising flour with one cup of all purpose flour, 1/2 tsp baking powder, and a pinch of salt.

How to make blended cottage cheese flatbread:

This cottage cheese flatbread recipe is ready to enjoy in just a few simple steps and features one of current favorite ingredients to bake or cook with- blended cottage cheese!

Here’s how you’ll make it:

1) Start by blending your cottage cheese. Add about 1 cup of cottage cheese to your blender or blender cup and blend until smooth.

Some brands blend easier than others and I find that brands with higher moisture content, like the Daisy brand, blend the easiest without needing to add any liquid.

2) Add your blended cottage cheese to a bowl with your self rising flour and optional pinch of salt. Use a spoon or spatula to begin combining your ingredients until they reach a crumbly texture like this.

3) Pour the crumbly dough out onto a cutting board and use your hands to knead and combine the ingredients until they form a uniform and smooth dough ball like this. This will take you about 1 to 2 minutes so stay patient!

4) Cut your dough into 4 equal pieces then roll each smaller piece into a ball shape.

5) Sprinkle your cutting board with a little bit of flour and roll your small piece of dough around in the flour until coated. Then, use a rolling pin to roll your dough out into a thin, flatbread shape. Don’t worry, the dough will rise when we cook it!

6) Warm 1-2 tbsp of oil of choice in a large skillet over medium heat. Spread the oil evenly along the bottom of your pan so that it is very thin. After about 2 minutes of your oil warming, add your flatbread and cook for 2-3 minutes or until it begins to become golden.

Flip your flatbread with a spatula and cook for another 2-3 minutes until both sides are golden brown and slightly crispy.

Cook your flatbread on each side for 2 to 3 minutes until golden and risen.

7) If desired, add flavors like garlic or herbs to your flatbread then serve with toppings of choice such as tzatziki, hummus, whipped feta, and more! Enjoy!

This cottage cheese flatbread recipe is not only easy to make but it’s also incredibly versatile. You can:

  • Dip it: Flatbreads pair perfectly with dips like my healthy buffalo chicken dip, spinach artichoke dip, and more.

  • Top it with spreads or flavors: Tzatziki, hummus, bruschetta, whipped feta are all delicious with this flatbread recipe. If you want to double up on your cottage cheese, top it with my 2 ingredient cottage cheese ranch dip!

  • Wrap it: I used this flatbread for a meditteranean chicken wrap but you can wrap just about any ingredients into this recipe.

  • Serve it sweet: Who said cottage cheese flatbreads can only be savory? You can take a sweeter twist on your flatbread recipe by serving it with strawberries and Nutella or topping it with bananas and peanut butter.

  • Flavor it: This cottage cheese flatbread recipe gives you a super simple, neutral flavored flatbread. You can always add in a scoop of garlic or garlic powder or top this flatbread with a parsley butter for some additional flavor.

    1. This flatbread is definitely best enjoyed fresh so that you get the warm and crispy flavors. If you want to store it, I would store it in an air tight container or ziplock bag in the refrigerator for a maximum of 3 days to enhance freshness.

      Then, warm it up slightly when you are ready to enjoy! Warming up your flatbread will help make it more malleable and less breakable.

  2. What if I don’t have self-rising flour?

    1. Self rising flour is simply flour that already contains baking powder and salt. If you do not have it, you can definitely make your own at home!

      Use the same amount of all purpose flour as self rising flour and add 1/2 tsp baking powder and some salt for every one cup of all purpose flour.

  3. Do I have to use cottage cheese?

    1. For a cottage cheese flatbread, yes. If you don’t have cottage cheese on hand, you can substitute cottage cheese for equal parts plain greek yogurt which will give you a tangier flatbread but a flatbread that is equally as nutritious!

  1. Place your cottage cheese in a blender cup and blend until smooth.
  2. Add your blended cottage cheese, self rising flour, and a pinch of salt to a bow. Stir with a spoon or spatula until it becomes crumbly.
  3. Pour the crumbles out onto a cutting board and use your hands to knead and roll the dough until it forms a uniform ball (about 1-2 minutes).
  4. Use a knife to cut your dough ball into 4 even sections. Roll each section into smaller balls.
  5. Add 1-2 tbsp of oil to a large skillet and allow it to warm over medium heat on the stove.
  6. While your oil warms, sprinkle some flour on your cutting board and the top of one dough ball and then use a rolling pin to roll it into a thin, circular sheet. Continue to sprinkle flour if it is sticking. Repeat with each small section of dough until you have 4 flatbread rounds.
  7. Place one of your flatbreads into the warm oil and cook for 2-3 minutes or until it has risen and begins to turn slightly golden. Flip and cook for another 2 minutes until fully Cooked and each side is golden then set aside. Repeat with each flatbread until all are fully cooked.
  8. Serve with tzatziki, hummus, or other toppings of choice. Enjoy!
