Sometimes, you want to sweet but you may not have the time. Or maybe you need a sweet breakfast that will feed a crowd without you standing by a pancake griddle all morning!

Enter, pancake muffins from a mix. These mini chocolate chip pancake muffins have no bananas yet still full of flavor and an easy crowd pleasing breakfast that your family and guests will love!

I have quite a few recipes that I love already posted on the blog but these muffins with mini chocolate chips have quickly risen to the personal favorites list for me… and my sons! I know you’ll love this recipe because it’s:

  1. Made from a mix: Baking muffins from pancake mix is a fun twist on a breakfast staple… and super easy to do!

  2. Ready in under 20 minutes: This recipe comes together in just one bowl and will be ready to enjoy in under 20 minutes making it a special breakfast that you can make in a flash.

  3. Customizable: I made these muffins with mini chocolate chips but you could certainly switch out your mix ins and pancake mix you choose.

  4. Pairs well with toppings: These muffins are delicious on their own but also pair well with maple syrup, peanut butter, vanilla greek yogurt, and other toppings you enjoy on pancakes.

  5. Meal prep friendly: Store this muffins in the refrigerator and enjoy throughout the week as a meal prep breakfast idea. For a balanced breakfast, I would add a color and a protein!

Ingredients:

  1. Pancake Mix: While I wasn't able to test every pancake mix out there, you should be able to use your favorite! I tested this on Kodiak Pancakes, Pearl Milling, and Birch Benders.

  2. Egg

  3. Milk: I used whole milk.

  4. Mini Chocolate Chips: I recommend using mini because when you use mini chocolate chips, muffins stay together better.

  5. Honey: This gives the batter a touch more sweetness than a traditional pancake.

  6. Vanilla Extract

  7. Cinnamon

A Note From Lauren: I tested this recipe with three different pancake mixes to see how the recipe turns out with different mixes and all of them were delicious! If you choose a pancake mix that is higher in protein, like Kodiak Pancakes, your muffin will be slightly denser in texture.

How to make pancake muffins from mix:

The best part about these mini chocolate chip muffins is how quickly (and easily) they come together. With pancake mix, some standard ingredients, and 20 minutes, you can have these fluffy muffins ready to enjoy in no time. Here’s how to make them:

  1. Add your milk, egg, and honey to a large bowl and mix until well combined.

  2. Add your pancake mix, vanilla, and cinnamon to the milk mixture and stir until smooth. Then, mix in your mini chocolate chips.

  3. Line a 12 muffin tin with silicone liners (Or spray the pan with non stick spray or line with paper liners that have also been lightly sprayed) and evenly distribute the batter between the 12 liners.

  4. Bake at 350 for 16-18 minutes or until a tooth pick comes out clean. Top with your favorite toppings and enjoy!

Substitutions and Swaps:

You can certainly customize this recipe by:

  • Change the mix-ins: Don’t feel married to chocolate chips. If you want to use another flavor then I would recommend dried fruit, fresh fruit, or nuts!

  • Swap your pancake mix: The pancake muffins mix you use can be swapped out. I tested this recipe multiple times with different mixes and while they all varied in texture, they all tasted delicious so try it out on your preferred mix!

  • Add your toppings: Think of your favorite pancake toppings and add them to these muffins! My personal favorites are maple syrup, peanut butter, or vanilla greek yogurt.

  1. Can I use any pancake mix?

    1. I tested this recipe on 3 different mixes and feel confident that MOST mixes will result in a delicious product so definitely try it out with your preferred mix knowing that texture may vary.

  2. How would I make gluten free pancake muffins?

    1. To make these gluten free chocolate chip muffins, I would use a gluten free pancake mix like Birch Benders gluten free, Kodiak Cake gluten free, or King Arther gluten free pancake mix. I personally did not test out a gluten free mix so cannot speak to the texture.

  3. Do I need to use chocolate chips?

    1. No, you do not! You can leave these muffins plain or add in other mix ins like nuts or fruit.

  1. Preheat your oven to 350 degrees.
  2. Add your milk, egg, and honey to a large bowl and stir until well combined. Then stir in your pancake mix, vanilla, and cinnamon.
  3. Gently stir in your chocolate chips.
  4. Line a 12 muffin tray with muffin tins OR spray with non-stick cooking spray and evenly distribute your batter between the 12 cups. *Tip: spray the tin liners with spray or use silicone liners to help the pancake mix separate easier.
  5. Bake for 16-18 minutes or until a toothpick comes out clean. Enjoy!
