Baked Chocolate Chip Oatmeal
This baked chocolate chip oatmeal combines blended oats and chocolate chips for a sweet breakfast option that is lower in added sugar than other breakfast pastries.
If you have not made the viral tik tok baked oatmeal, it’s high time you try it out! These blended baked oats take on a cake like consistency but with significantly less added sugar than a lot of other breakfast pastries like muffins and breakfast breads.
You can top blended oatmeal with a lot of different flavor options, but today we are going the chocolate chip cookie route and just added a few chocolate chips to our oatmeal batter. I think you (and your kids) will love this recipe for a fun breakfast idea!
What are blended oats?
Blended oats are simply dry oats that have been pulsed in a blender or food processor until they reach a smooth, flour like consistency. This oat powder can then be used in a variety of ways as oat flour, a gluten free flour option that is also safe to eat uncooked!
Oat flour can be used in baked goods, energy bites, or in recipes like this blended baked oatmeal. You can use a variety of oat options but I tend to use old fashioned oats.
Why you’ll love this recipe
Easy to make: all you really need to do is blend a few popular kitchen ingredients into a blender or blender cup, stir in your chocolate chips, split the batter between two pre-greased ramekins (mine are 6oz), and bake!
If you follow me on instagram, you know that I’m a huge fan of the individual ninja blender cups. If you have a ninja blender, I recommend you buy these attachments for single serve smoothies or for recipes like this chocolate chip baked oatmeal!
Kid friendly: This recipe would be perfect for a special first day of school breakfast or even for a birthday! I will note here that the batter uses banana and you can mildly taste the banana in the finished product… keep that in mind as you choose which child will enjoy this cookie in a cup.
Lower in added sugar: This baked chocolate chip oatmeal feels like an indulgent breakfast but actually has significantly lower added sugar content than other popular breakfast pastries.
Ingredients:
·Old fashioned oats: Blended and pulsed into an easy oat flour.
Chocolate chips: Because you can’t have baked chocolate chip oatmeal without the chocolate chips. I used semi-sweet but you could sprinkle in mini chocolate chips or dark chocolate nibs! If you want to change the toppings, omit the chocolate chips
Egg: The binder for our ingredients.
Banana: This recipe does include half a banana which also acts as a binder for the batter. You can taste the banana slightly in the finished product, but it’s delicious!
Ground cinnamon: An optional add in that adds some extra flavor. Again, omit if you don’t have this on hand.
Baking powder: This is what helps the batter rise into it’s cake like texture.
Ground flaxseed: This is completely optional and just adds a boost of nutrition! Omit it if you don’t have this on hand.
Milk: Any milk will work.
Honey: This is for sweetness but you could also use maple syrup or a dash of vanilla!
Recipe modifications:
You can personalize this chocolate chip baked oatmeal by:
Topping it with extra toppings like peanut butter, whipped cream, or fresh sliced strawberries.
Add different mix ins like chopped walnuts, whole oats (oatmeal chocolate chip cookie baked oats anyone?), shaved coconut and more!
Make it entirely your own by omitting the chocolate chips and adding your own toppings like peanut butter and jelly or fresh berries.
Recipe FAQ:
Can I microwave this recipe?
Yes! I have always made mine in the oven because I like the way it crisps up the top but you can also microwave these ramekins for about 3 minutes or until a toothpick comes out clean.
Is this chocolate chip baked oatmeal gluten free?
Yes, this recipe is naturally gluten free because we use old fashioned oats for the flour base. Although oats are naturally gluten free, you can be extra extra careful by buying certified gluten free oatmeal.
Is this a good meal prep breakfast idea?
I would say so. You can bake these ahead of time and simply warm them up in the microwave for about 20 or 30 seconds then enjoy!
