  1. Sourdough bread: I always think that sourdough bread is the best base for a good avocado toast but you could use any bread that you prefer. Using a whole grain bread would be a great way to add more fiber or you could use a bread that has nuts and seeds in it for a slight protein boost.

  2. Sliced avocado: I used a small avocado that was just beginning to soften for this recipe.

  3. Cottage cheese: Because we are getting a lot of healthy fats from the avocado, I personally recommend sticking to low fat or non-fat cottage cheese for this recipe. This will help keep the protein content high but lower the fat and calorie content.

  4. Crunchy chili onion: I purchased mine from trader joes but you can use any crunchy chili onion that you enjoy!

1) Toast your two slices of sourdough bread until it’s crispy and slightly golden. Then slice your avocado in half length-wise, gently remove the pit, scoop out the fruit, and slice into wedges. Distribute your avocado slices evenly onto each slice of toast.

If you find that the sliced avocado is too much effort or too hard to eat, then you could also smash your avocado until its smooth and spread that onto your toast as well.

2) Top each avocado toast with cottage cheese and crunchy chili onion to taste. I have recommended portions written in my recipe but you may need to adjust to better match your bread size and nutrition or flavor preferences.

This avocado cottage cheese toast recipe is delicious as it is written but it can also be made so many different ways. Here are a few suggestions:

  • Swap your bread: Choose a whole grain bread for more fiber or a nuts and seeds bread for a slightly higher protein content. If you want to get really fancy, you could also serve this recipe on my jalapeño cheddar cottage cheese bagels!

  • Add some seasonings, herbs, or flavors: I kept this recipe really simple and skipped seasoning my cottage cheese but you could add some pepper, paprika, lemon juice, or fresh herbs for a boost in flavor.

  • Skip the crunchy chili onion: If you want to keep this recipe family friendly then you can skip the slightly spicy crunchy chili onion topping.

  • Add an egg: This recipe would be delicious and even higher in protein if it was topped with a fried egg or hardboiled egg slices.

      If you want to lower the calorie content of this recipe then my main suggestions would be to decrease the portion of avocado you add and choose a low-fat or non-fat cottage cheese which will have all the protein but a lower fat content to lower the calories.

    1. I would recommend prepping this recipe right before you are ready to serve it to avoid any browning in your avocado or soggy toast.
