What to eat with air fryer red potatoes:
While this recipe does contain parmesan and dill flavors, I find that these air fryer red potatoes pair nicely with just about any recipe you put them with from eggs at breakfast to salmon at dinner. Potatoes are considered a starchy vegetable so I include them as the carbohydrate of my plate and then pair them with proteins and vegetables like:

Can you eat potato skins?
You can and you should! While most of the nutrients of a potato like potassium and Vitamin C are actually found within the flesh, nearly half of the fiber content is found in their skin so removing the skin of a potato removes a lot of that key nutrient. If you include the skin, be sure to give your potato a good wash to remove any dirt that’s left over from where they were grown!
These red potatoes are air fried with the skin on to preserve all of the fiber content and enhance a bit of the exterior crunch.
Ingredients:
Red potatoes: Depending on the size of your potatoes, you will need to halve or quarter them. You want about 1 to 2 inch chunks of potatoes chopped for the air fryer.
Olive oil: This will help our toppings stick to the air fryer and enhance the crispy outside.
Grated parmesan: Grated will stick the best to your potatoes:
Fresh Dill: This gives an herby essence to the potatoes that is delicious. You can omit the dill or use dried instead of fresh but I do find that fresh works best!
Minced Garlic: Parmesan garlic potatoes? Count me in.
Seasonings: Garlic salt and a little black pepper.

Can I use other types of potatoes?
Yes, this recipe can be made with other waxy potatoes like yellow potatoes which have a similar starch content to red potatoes and will cook similarly.
How long will these potatoes last in the refrigerator?
You can store these potatoes in the refrigerator for 3 to 5 days!
What if my potatoes didn’t cook?
The cooking time will vary greatly depending on the size of the potatoes you have in the basket. My red potatoes were cut in half to equal sizes of about 1 to 2 inches and took 20 minutes to cook. If yours are not cooked, keep adding them to the basket for another minute at a time until they are fork soft!
